- 2 Tbsp.
olive oil
- 1 medium
onion, chopped
- 1/2 green
pepper, chopped
- 1/2 red
pepper, chopped
- 2-3 boiled
potatoes, chilled and diced (leave skins on)
- 1-15 ounce
can kidney beans
- 1/2 cup
water
- seasonings
- dash of salt, pepper, garlic powder, tabasco sauce, Mrs. Dash
seasoning
Directions:
- Heat olive
oil in large fying pan. Saute onion until soft.
- Add green
and red peppers and saute briefly.
- Add diced
potatoes, mix well. Cook for 10 minutes, turning with spatula
every 2 minutes.
- While this
is cooking, rinse the beans well to remove the *goo*, then mash
1/2 to 2/3 of the beans with a potato masher. Mix the beans
into the mixture in the frying pan, add 1/2 cup water, and cover.
Cook over medium
heat for about 5 minutes.
- Season
to taste, serve, and enjoy. This serves two or one very hungry
person. (I ate it all the first time Dick made it as I was very
hungry and it was soooo good!)
Serving
Suggestion: For
turkey hash, substitute diced turkey for kidney beans. Or you
may simply add diced turkey to this recipe for those who want
to use up that left-over holiday (or anyday) turkey.
