Tbsp. olive oil
- 1
medium onion, chopped
- 1/2
green pepper, chopped
- 1/2
red pepper, chopped
- 2-3
boiled potatoes, chilled and diced (leave skins on)
- 1-15
ounce can kidney beans
- 1/2
cup water
- seasonings
- dash of salt, pepper, garlic powder, tabasco sauce,

Directions:
Heat
olive oil in large fying pan. Saute onion until soft.
Add green and red peppers and saute briefly. Add diced
potatoes, mix well. Cook for 10 minutes, turning with
spatula every 2 minutes. While this is cooking, rinse
the beans well to remove the *goo*, then mash 1/2 to 2/3
of the beans with a potato masher. Mix the beans into
the mixture in the frying pan, add 1/2 cup water, and
cover. Cook over medium heat for about 5 minutes. Season
to taste, serve, and enjoy. This serves two or one very
hungry person. (I ate it all the first time Dick made
it as I was very hungry and it was soooo good!)
Serving
Suggestion: For
turkey hash, substitute diced turkey for kidney beans.
Or you may simply add diced turkey to this recipe for
those who want to use up that left-over holiday (or anyday)
turkey.
