I enjoy taking time
to cook meals from scratch for my family. However, there
are days in which something is needed for supper really
fast. This recipe fits that bill. Even though my family
is not as vegetarian as I am, this is one dish they eat and don't
really even know it's not ground beef. If I do have some
organic ground beef on hand (my grocery store carries Laura's
Beef which is organic), it's easy to make two pans of the Sloppy
Joes, one with meat and one vegetarian.
- 1/2 medium onion
- chopped
- 1 Tbsp. olive oil
- 1 package Green
Giant Harvest Burgers for Recipes
- 1/2 bottle your
favorite BBQ sauce - approximately 1 cup
- 1/3 - 1/2 cup water
Directions:
- Brown the onions
in the olive oil 2-3 minutes.
- Add the package
of Harvest Burgers for Recipes.
- Add the BBQ sauce
and water and simmer until the veggie crumbles are thawed and
enough water has evaporated to make a nicely thickened sauce.
Serves 4 easily.
Serve over a baked
potato (can be done in the microwave while the Sloppy Joes are
cooking) or in a whole grain bun with some other cooked veggies,
salad (have your family make this), and fruit. Voila - easy
and fast and look at all the fruits and vegetable servings
you are eating with this meal!
