- 1-1.5 # fresh salmon
fillets or steaks
- 1 T. each of fresh
chopped parsley, rosemary
- 1/2 teaspoon capers
- 1 peeled garlic
clove, sliced
Place salmon in a
skillet and cover with water. Add herbs, capers, and garlic.
Bring water to a boil, turn down heat to simmer, and cook until
salmon flakes easily with a fork in the thickest spot (usually
~ 10 minutes per inch of thickness). Save the poaching liquid
for the Fish Stew (may freeze). Sometimes our cats get a
very special treat by having the cooled liquid put on their dry
food!
