- 2 large tomatoes,
cut so they spread open into 6 or 8 slices
- 1 - 6 oz. can albacore
tuna in spring water
- 2 T. hummus
- 1/2 large carrot,
grated
- 1 green onion,
chopped (use white and green parts)
- 1/8 red pepper,
diced
- 10 black olives,
diced
- Handful of parsley,
and other fresh herbs, like rosemary, thyme, or summer savory,
chopped small
Directions:
Mix all ingredients together. Serves 2 generously.
