- 2 C. hot
water
- 1 C. Dates,
pitted
- 2/3 C.
raw cashews
- 2 Tbsp.
arrowroot powder
- 1 pinch
sea salt
- 1 tsp.
Vanilla
- 1 tsp.
Orange rind
Directions:
Mix the 2 Tbsp. arrowroot powder with a small amount of water to dissolve it.
Then pour it into a blender along with all the other ingredients. Blend on
high for approximately 5 minutes. Pour mixture from the blender into a medium
sized pot. Cook mixture (stir constantly) over low to medium heat for approximately
3-5 minutes. Eat either hot or cold. If you would like to eat it cold, pour
it into a storage container and then store overnight or for at least an hour
or two. Garnish with banana slices (or any other cut up fruit) and add milk
if desired.

This
pudding is yummy and very soothing. It would look beautiful
with a few fresh raspberries or pomegranate seeds sprinkled
on top.
